Cleaning...YUCK!!!

Hate to disappoint, but I did not make it to the grocery store today! We had a visitor come to see us today, Aunt Donna! Also, today was a catch up cleaning day. Klint, Sophie, and I have all been sick this past week. That mean no cleaning got done! My kitchen was deplorable and the living room looked like a furniture store. We got a new recliner and coffee table/ottoman last week. The old coffee table and ottoman were both sitting in the middle of the floor! So, once again, the house is not spotless, but it is back in order and good enough that we can get back on our cleaning schedule next week.

Yes, we have a cleaning schedule. I did this for several reasons. 1. I have always made list to keep up with things I need to do at work, what I need to pack for a trip, lists for the grocery store, you get the picture. Why not make a list for cleaning??? (I know that I may have a problem!) 2. Klint and I would have the little couple squabbles about him not doing something and he would always say, "I don't know what to do! You have to tell me!" Well, now it hangs on the fridge and to his credit, he looks at it and really helps me out! 3. I don't want to spend all day Saturday cleaning! If I can do a couple of things and the laundry, then my day still feels like mine and I can do what I want. 

The idea for the cleaning schedule came from the Blog "Organizing Made Fun". She has a whole blog dedicated to organizing and cleaning and wonderful ideas! The post about having a clean house is broken into several parts. All are good and have great ideas. She even posted a copy of her schedule on her blog. Below is a copy of my schedule.

Monday: 
  • Clean bathrooms (toilets, sinks, mirrors, sweep, and swiffer. Do tubs every other week.)
  • Fold Laundry
  • Clean kitchen (Load dishwasher and wipe counters down)
Tuesday:
  • Pick up bedrooms (clothes, toys, take trash out)
  • Sweep (kitchen, living room, garage entrance)
Wednesday:
  • Vacuum bedrooms, hallways, and rugs
  • Clean kitchen (Load dishwasher and wipe counters down)
Thursday:
  • Sort Mail
  • Pick up living room and dust (use furniture cleaner every other week)
Friday: 
  • Clean Kitchen with cleaner and declutter counters (it is amazing what the counters catch in a week)
  • Sweep and vacuum
Saturday:
  • Swiffer floors
  • Start doing laundry
Sunday:
  • Finish laundry
  • REST!!!
It doesn't seem like a lot and it really isn't. It takes about 20 to 30 minutes to do each of these things (Well, laundry is an all day thing). I can usually spare that much time. One thing that the above blog mentioned was that if you miss a day it is okay. Let it go until next week. Which is all well and fine, but eventually you do have to catch it all up, hence my day today. She also recommended getting a bucket to keep all of your cleaning stuff in. I went to Wal-Mart to day and found this bucket.

Something else I have learned is that The Dollar Tree has really good cleaners for really cheap. I stopped there today and picked up a few things. I found Comet cleaning powder which is some of my favorite cleaner. I also found some microfiber cloths for dusting and furniture polish and some Brillo pads for deep scrubbing. Someone was talking about their cleaning lady (oh, how I wish) and how they told them that cheap paper towels were the best to use for cleaning.  It makes sense because I swear I saw somewhere that newspaper made a good cleaner for mirrors and windows. I found a glass cleaner at The Dollar Tree that contained vinegar. I thought that was pretty awesome. My Dollar Tree finds are below.

I had a lot of other cleaning supplies here, so I threw them in my bucket and I am all set! Now to find a place to store it (thinking the laundry room).

I did add some Swiffer dusters I had to my bucket. 

So, I did have a productive day even if I didn't make it to the grocery store. I got the house back to ground zero clean so we can do our weekly chores and get it back "spotless" or as spotless as it can be with a two year old running around the house!

Grocery Shopping 101

Wow!!! What a busy Friday! As I am typing this, I am baking two batches of brownies and getting ready to make some Garlic Chicken Puffs (So easy and so good!). We are having an area wide congregational sing at our church tonight and finger foods afterwards. So glad I started on this last night!

Okay, let me just begin by saying that I am not an expert at grocery shopping nor do I proclaim to be one. I I remember a conversation that my dad and I had one time about grocery shopping. He told me that he hoped I was a better grocery shopper than my mother was when they first got married. I hated to inform him that I was not. At that point in my life, I was newly married and the only shopping I had done was for me. I was in college and I can remember the first time I went to the store to buy food just for me. I bought grape juice, cheese, and crackers (I guess I was going for a non-alcoholic wine tasting thing). I also bought just junk. But I was in college, that is how we rolled (I know...that was lame!) Then, I got married and I had to buy for two and try to make meals. It was tough! But in all honesty, I don't know a lot of people who are great at grocery shopping unless they go with a list and stick to it. When I would make a menu and stick to a list I did so much better. I didn't spend as much money. I didn't buy junk, and I came home with what I needed. On the other hand, going in without a list and just roaming the aisles to try to make a meal is no fun, takes forever, and you always forget something!


So, to start with I make my menu. You can find it here. I then take a piece of paper and divide it to four sections. I have one section for Dairy/Cold Food, one for Meats, One for Veggies/Fruits, and the last section is broken into two spaces. One says frozen veggies and the other says Other (for things that are not in the grocery section). I then fold the paper in half and on the back right Center Aisles. I tried to this according to how the store is laid out. I shop at Wal-Mart (I am a glutten for punishment!). I honestly don't like it, but where we live is kind of limited in grocery shopping. Our town is getting a Publix hopefully by the end of the year and that will be great! I really want to get into couponing and I understand they are great with coupons and I just LOVE Publix. They also have a feature where you can type in your grocery list and they will compile your list according to how your store is laid out! I am so excited!

A few things I always put on a grocery list: Milk (we have a two year old...kind of a no brainer!), Coffee Creamer (I am a total addict), Sandwich Meat and Bread (Klint likes to come home for lunch and wants something quick) and snacks for Sophie. I just started putting a pack of post-its in the kitchen with a pen so that we can write down things we need to get that are outside of the menu. 

Just because peanut butter and pickles is on this list doesn't mean anything....he he!

And now....THE LIST!
Dairy/ Cold Stuff
  • Chive and Onion Cream Cheese spread (2 tubs)
  • Sour Cream (16 oz. or just a big container. We eat a lot of sour cream at our house!)
  • Cheddar Cheese (Block or shredded. I usually just buy a big block and shred as I need it.)
  • Shredded Monterey Jack Cheese
  • Cream Cheese (4 8oz. blocks. We eat a lot of cream cheese too)
  • Ricotta (I think you only need a cup so just a big enough container for that.)
  • Mozzarella (Again, I just buy a big block.)
  • Crescent Rolls (3 cans. Always good for a side.)
  • Eggs (We always need eggs.)
Meats
  • Chicken (I will probably buy two pack of 9 breast to have extra and just to be sure I have enough.I freeze two breast to a bag and thaw as I need them.)
  • Hamburger meat (I buy a big four pound pack and divide it.)
  • Bacon
  • Chicken wings
  • Rump Roast or any kind of roast (I need two because I use one for bar-b-que.)
  • Bone in chicken breast
  • Pork Loin
  • Sandwhich meat (We always need sandwhich meat.)
Veggies/Fruit
  • 4 baking potatoes

  • red potatoes (just a bag)
  • cauliflower florets
  • mushrooms (We love mushrooms! I know they aren't for everyone.)

  • tomatoes (I try to get the ones with the vine still on them, but get what you know.)

And there you have it! I know you are thinking "WOW! That is a lot of stuff!"  I already have a lot of this at home as some of you will have a lot of it. Mark off what you don't need. If you run into me I want have all of this in the buggy, but these are all the ingredients you will need for the menu. If you see I left something off, please let me know! 

Something silly I do: I try to set a goal for when I go in the store. I set a limit on how much I will spend and I use a calculator. I know that is kind of a "duh" thing, but sometimes seeing that other people do something makes you feel better about doing it.

Menu Making~ Part 2: The Menu!

I am going grocery shopping on Saturday. Klint had some changes in his pay so I will have to make this list go for three weeks. I may have to go in the middle to get a few staples, but I will at least have the basics for the next three weeks!

Another few notes about menu making:
1. Think about your week. Mondays, Wednesdays, and Sundays are weird days for our family. Monday is return to work or school day. Wednesday and Sunday nights are church days. So I try to plan my left over nights or a crockpot night on those nights. I know that Friday and Saturday are not rush days so dinner can be a little late and I have more time to make more complicated meals.

2. The weather is important. I am a weather addict! Klint used to laugh at me because I would get ready in the morning with the weather channel on the whole time and it drove him crazy because eventually they repeat. I check the weather every morning to decide what to wear and how to fix my hair. It just makes sense to check it to decide what to eat because I personally don't want to have chili if it is going to be 90 degrees outside. In the same case, I don't want Klint grilling if it is 50 degrees (though it probably wouldn't bother him!) So I try to look at what the weather forecast says...I know that may seem crazy, but it is part of my process. (and I know that it is hard to see the weather for three weeks, but you can predict. That is all the weather people do!)

3. Plan for events. On my menu below I have Valentine's day and Klint's birthday! February 23rd is Sophie's birthday so I need to plan for these events (her's will be on the next list) and add anything extra to the menu. I also have super bowl Sunday to think about and there is one night that I will not be home so I may do something in the crockpot for Klint and Sophie before I leave that morning.

4. Klint wanted me to add "Think cheap!" I don't make recipes that call for fancy cuts of meat or exotic veggies. I try to keep it simple and cheap!

I will do a post about taco night at our house! It is a favorite (as you can see we have it listed twice)! I will also do a post on the pot roast and BBQ sandwiches. A few other things to note, some of these are new recipes and I haven't made them. They fit the bill for what I was looking for from my previous post. I also try to look at the reviews and comments to see if someone did something different or if it wasn't worth fooling with at all. I will try to post if I see a recipe is more difficult. Menu Making ~ Part 1

I am getting ready to do our two week grocery list. I say two weeks, but I really try to make it last between the times we get paid. I get paid once a month and Klint gets paid every other Friday, basically two weeks. I tried to start doing menus when we first got married and did pretty good with sticking to it (for awhile), but when we first go married Klint was the only one working and I was in my masters program so we were kind of stuck to the center aisles for the things we could afford. I tell a story about one time when Klint was in his second tax season he called and asked me what was for dinner. We had a pound of hamburger meat (it was fairly cheap) and a box of Great Value shells and cheese (couldn't afford the real stuff). I threw the two together in a pot and called it "Tax Season Surprise." It was a hit with Klint and I thought it was tasty too. I like to tell the story to remind myself of how things used to be and where we are now. I still make Tax Season Surprise, but we have more money now so I can chop up onion and put that in it...he he!

From my menus I make my grocery list. I will do a post about that later. When I get ready to do my menus I think about several things.

1. What does Sophie like to eat? This was never an issue when it was just Klint and I. I will eat just about anything (except lima beans and butter beans) and Klint will eat anything (except maybe brussel sprouts). Sophie is our picky one. She didn't start out that way. She would, at one point, eat whatever we put in front of her. Now she is a carb aholic. Loves bread, noodles, rice and all things carbs. She is a cheese muncher, any kind will do. She is also a junk food craver (not that we have too much junk food in the house). So, all of these factors do pose a challenge. She also loves to change the rules on us (what child doesn't?). She will love broccoli at one dinner and then hate it the next. She will want nothing but tomatoes at dinner and then not touch them the next night. I refuse to be one of those parents that makes two different meals every night. That is why it is so important to try to factor in something that she will eat.

2. What is something healthy that will not make Klint's blood sugar rise? I often think about the year right after Klint and I were married and how unhealthy we ate, but really it was all we could afford. We ate everything canned (sometimes frozen veggies if they were cheap). We ate a lot of hamburger meat because it went along way and was cheap. We ate a lot of Hamburger Helper (once again, cheap!) We just didn't eat healthy. I often wonder what we would have done had Klint been diagnosed with diabetes during that time. The cost of medicines is huge. The cost of healthy eating is expensive and I honestly thank God that he waited to put that on us. We would have made it, but it definitely wouldn't have been easy.

All that being said, we do things to help Klint and in turn it helps me and Sophie. I don't use a lot of canned vegetables unless it is in soups or casseroles and then I try to find low sodium or the Campbell's Healthy Request as pictured below.  We eat brown rice. OKAY, I admit sometimes I have a weakness and eat white rice, but it is rare and only with certain things like stir fry. We eat whole wheat bread. That is a fairly new thing. I would always get White Wheat, but I am just not convinced that it is as good for you as regular whole wheat. We also eat whole wheat pasta when we can. I wrote a little about that in a previous post. You can see it here. As far as meat, I try to avoid a whole lot of pork because of cholesterol. We eat a lot of chicken and the occasional dinner with fish. I'll try to do a more specific post on diabetic cooking and diabetes later.

These are two cans I had in the pantry that I used the other night. Great Value also has the same thing and much cheaper!


3. What is EASY? Isn't easy the name of the game? I love easy! I love cooking in one dish! I love my crockpot! (I wish I had a shirt that said that.) I use it like two or three times a week! I love casseroles! I love things that you throw together and it comes out tasting like a million bucks! Pinterest has been super helpful in that. (I know! Enough with the Pinterst!) I also love Kraft Recipes! Kraft offers a two week menu.  I don't use these because they often have like frozen pizza night and I try to do avoid things like that. They offer diabetic recipes. The ingredients for their recipes are healthy and inexpensive. They do ask for you to use a lot of Kraft products, but you can substitute. They also have a feature where you type in what you have and it pulls up different recipes. I also love that when you find a bunch of recipes you can add them to a shopping list and it makes your grocery list! AMAZING!!!

4. Will it taste good? Another story time: Klint is such a good husband and this story is the proof! We got catfish fillets on sale one time (right after we were married) and I didn't want to fry them because a: I was trying to be healthy and b: I didn't know how to fry fish (and still don't!). I found a recipe for Dijon Catfish Fillets. Don't say it....looking back now the title in itself should have given me a clue, but being young and inexperienced, I made it. The smell was unbearable, but I soldiered on and baked it!!! Klint came home and was so sweet. He didn't say a word about the smell. He just acted eager to try it. I pulled it out and it looked like moldy fish. It was yellow with brown spots from the oven and I wish I could even describe the smell....nothing has compared since! I put it on the table and dished it up. Klint ate it and I tried. I gagged with every bite. Finally, I just asked Klint, "Why are you still eating this??? It is horrible!" He said, "Well, I didn't want to say anything, but it is pretty awful!" We laughed and tried to give it to the dog. He wouldn't come near it! That was one of the sweetest things to me that he tried to eat it even though it was the worst. We ended up having DQ Blizzards for dinner that night! So much for being healthy, huh?

When I look at a recipe the first question I ask is, "Does it have dijon mustard in it?" He he! Not really, but I do run over the ingredients. Anything that I might have to buy for just one recipe and never use again I usually steer clear of. Like recipes with curry are a big NO because I will never use the curry again and we don't like curry! I also try to find things that will produce leftovers. Klint takes his lunch to work and I try to when I can. We also have leftover nights at our house at least once a week. So leftovers are a must.

That is pretty much the basics of my menu making. I will post my menu for the next two weeks sometime tomorrow night with the links to the recipes. If I don't have a recipe for it (something I just know off my head) I will try to get that posted too. Just give me some time to work the kinks out! Happy reading (and eating!)

Another Recipe...

I have time for a quick blog! YAY! Blogging is kind of addicting! Don't worry people...I promise the newness will wear off eventually....maybe!

I had a request for a recipe that has became a family favorite in our house! My husband loves this recipe!!! I found it on Pinterest with a very unassuming picture and the recipe written in the description. The blog this was posted from is "Stick a Fork in it." This blog has other recipes available, but I have yet to really look at them...maybe one day! 

Anyway, this is a super easy recipe....I mean EASY!

I made this with bow tie pasta! Equally just as good!


What you will need for Crockpot Chicken and Rice is:
3 to 4 chicken breast (the original blogger said she used frozen, but I thaw mine as much as I can)
1 can cream of chicken
1 8oz. block cream cheese
1 pack of dry Italian dressing (someone asked if the flavor was strong and it isn't, but it adds a nice flavor.)

If you are anything like me, it is so hard to get up in the morning, even with a two year old telling me to get up from the side of the bed!  I get up and put the cream cheese, soup and mix in the Crockpot on high and leave it while I get ready. I almost forgot it last time, but remembered before I left. 

Once everything is melted I stir it up. It seems the longer you leave it (at least 45 minutes to an hour), the better it is to mix. I then put my chicken breast on top and turn the Crockpot down to low. I cook it for 8 hours because, well, I work...he he! You can also cook it on high for 3 to 4 hours, but I imagine you would definitely want to make sure your chicken is thawed.

When I get home I take a knife and kind of cut through the chicken so it is a little shredded, but not true shredded. Then I cook rice and serve it over the rice usually with a side of steamed broccoli. This would also be good with pasta too.

What's for Dinner???

I hear this question everyday at work. My friends DeeAnn and Tammy ask me. My co-teacher, Jan, ask me. My husband ask me and as I mentioned before, Sophie ask me on the way home....I guess you get the picture! And in all honesty, I really don't mind! I love talking about food! I love to eat! I don't know many teachers (or people for that matter) that don't!

Well, tonight we stayed home from church (after saying in my previous post that we go whenever the church building is open, but we are all three sick right now with colds and crud...so, we had a reason). I had Creamy Chicken and Broccoli Casserole on the menu for tonight (post about my menus is coming soon). I got the recipe from the Blog "Pearls, Handcuffs, and Happy Hour" found on Pinterest. We love love cheese in this house and Sophie loves broccoli (usually). I like easy and quick! This recipe was bound to be a winner!

The ingredients were:
3 chicken breast cooked and shredded (I have a trick I found on Pinterest for shredded chicken)
2 cans of cream of chicken
1 cup of mayo
1 bag of frozen broccoli, thawed and chopped
1 cup cheddar cheese (I used sharp)
1 cup colby and moterey jack cheese
salt and pepper to taste (I forgot to add this, but it still tasted good to me)

I boiled my chicken first...
Yum...not really, but...

Okay, here is my trick to shredding my chicken and it works great!!! I take it and put it in my Kitchen Aid mixer (thanks, Mom!) with the paddle attachment and put it on medium to low for a minute (literally! It doesn't take long at all). It shreds it perfectly. Found this on Pinterest from the blog "Simply, Healthy, Family."

Next I chopped my broccoli. I used my Pampered Chef knife set! I got it at a huge discount because I had a party! I use Melissa Bundrick for all of my parties. She is not only family, she is a true professional and has really embraced being a Pampered Chef consultant. She truly believes in her products and does a great job. If you are in the Valdosta, Tifton, or not too far away area, I highly recommend her. Anyway, back to my casserole!

I thawed out the broccoli. I used Great Value broccoli (the Wal-Mart brand). I really use the Wal-Mart brand of a lot of things. I can't tell a difference in recipes and why pay more when I am just mixing it with a bunch of other stuff???

I then put all of my ingredients in my mixing bowl and mixed it together. Then I put it in a greased casserole dish. I used my Paula Deen square baker...I just love the red, not really that it is a Paula Deen.

I baked it at 375 for 40 minutes. When I pulled it out after 30, I was scared the middle wasn't all the way done. So I put it back in! In the meantime, Sophie organized my cookware...


And I made brown rice. I know what you are thinking "Brown rice??? Ewww!!!" Well, that is all we eat in our house. Don't get me wrong, I love good ole white rice as much as the next person, but with Klint being diabetic, we do what we can to help his sugar and eating brown rice and whole wheat pasta (and whole wheat bread) is how we do it. Some really quick advice, when getting into the whole wheat pasta, start small! Do angel hair or a thin spaghetti. Starting off with a fettuccine or linguine may turn you off completely. Work up to those. Also, baking whole wheat pasta as in lasagna or ziti, really helps. It taste just like regular pasta!

I used my Pampered Chef rice cooker when cooking rice. As seen below.


I put a cup of brown rice and almost three cups of water in my pot and put it in the microwave for five minutes, just enough time to get it bowling. Next, I turn it back on for another 20 minutes on 50% power until done. Brown rice has a crunch to it. It isn't that it's not done....it just comes out that way. When cooking white rice, I use one cup of rice, two cups of water and cook for five minutes and 18 minutes. It comes out perfect every time!

The dinner was a huge hit. Sophie ate it. Klint loved it and compared it to one his mom used to make (always a compliment to say that you cook like your husband's mom) and I loved it! There were a lot of left overs too for lunch and leftover night! I will make this recipe again for sure!

A side note: Sorry my pictures are so awful! I used my phone because my little camera is missing it's charger! As soon as I get it charged I will use it and maybe we will have better pictures!

Priorities and Goals

Okay, my first post on my revamped blog! So exciting!

I decided to start this blog to help my other working mommies out there. I am in no way perfect at keeping a house running, but I am learning new tricks and things that help me all the time.Pinterest has really been a saving grace for me in helping with organization ideas, recipes, and cleaning tips. I now create a two week menu. We have a cleaning schedule that we stick to. I have made several homemade cleaners that were posted from other blogs. It has really been great and helped me see that yes, my life is hectic and there isn't a lot of time for everything, but there is time for the things that are important.

It really come to your priorities. My priorities for my family and life are:

1. Have a happy marriage - This is super important to me and my husband! If we don't have a happy marriage then what do we have??? (a miserable family) I always want to strive to be an example of the wife I want Sophie to be. I want Klint to be the example for her to look for in a husband. I want her to see us working together to make our marriage work. Something I am going to try to start doing is using the book The Power of a Praying Wife. I downloaded just the prayers on my Kindle and have the hard copy on my bookshelf (need to relocate it to my bedside table). I think it is important to pray for your spouse and that is something I am working on in the new year!

2. Have a happy child - This does not mean that Sophie gets what Sophie wants (which she is pretty good about not saying "I want" too much). I want her to be raised in a house with love. I want her to be raised in a house where we love God and show that love to her. I want her to see us pray and have her pray when she wants too. I want her to know that we punish her it is with love and because we want her to be the best she can be! She is already a great kid to us. I know this will just get better!

3. Have family time every night - This usually happens around the dinner table. I have not always been a woman who cooked. I will admit that until recently, I was calling Klint every afternoon to find out what drive-thru sounded good for dinner. This was not good for us (weight issues and Klint's diabetes) and what kind of example am I being to Sophie? When I picked her up from daycare her first question was "Where are we going to eat?" Now she asks, "Momma, what you cooking?" which is so much nicer to hear. When we have our dinner, the TV is off and we just have our family time. We eat, talk about our day, try to get Sophie to taste something on her plate. I love it! Is it always convenient? Not always, but it is what we have raised Sophie doing and she expects it. It is a good habit to have!

4. Have a clean house - I don't mean immaculate by any mean. I simply mean I am not too embarrassed if you stop by. In all honesty, our house has never been filthy. It has always appeared lived in to me. I love the picture below, it truly describes my theory on the house. We have a two year old! Can I truly expect my house to be spotless? Nah! But I can try my best to keep it decent, thus we have a weekly cleaning schedule which I will share in a later post!

5. Raise Sophie in a God fearing home where we love to go to church - We honestly go to church every time the doors are open if we can. We go twice Sunday and on Wednesday night. I am not bragging and I am not saying it is always easy on a toddler's schedule, but it makes us feel good and Sophie loves church! She loves her class, she loves the people, and she is considered an adopted granddaughter by several of the members. She is so outgoing and doesn't know a stranger at church. There is no telling who she will sit with or visit with. We also send her to a Christian daycare. She learns Bible stories and she already knows so many verses. My favorite is John 3:16 and she nails every word except everlasting. It comes out more like "essersasting" but that is still a good effort and just precious!

6. Have time for me - I do get an occasional breath from my whirlwind of a life! I think everyone needs to try to find that time. My husband bought be a Kindle Fire for Christmas and it is my little escape. I love to read! I read four books over Christmas break and two more since then! It is great! It is also helpful with pulling up recipes on the web and having it handy in the kitchen. Great investment! I love to get the occasional pedicure with friends. I have been known to go out of town for a girls' weekend. And a bubble bath is always a girl's best friend! I may not get time every night, but I never feel deprived if I don't.

So, that is my life in a nutshell. I hope to share a lot of the things that I have found and tricks that I do to help other full time working mommies or stay at home mommies keep their lives in running order!
