Teacher Projects!

 So I did some Pinterest inspired projects for school this year. I just wanted to share a few of them.


This is my "To Do" dry erase frame. I bought the frame, markers, and paper from the Dollar Tree. It cost around $1.60 I am estimating because it was a whole pack of paper and a three pack of markers. Pretty excited about it and I have already put it to use. I want to add a bow to it, but I couldn't find my hot glue gun today. It got packed up somewhere....


This is my file organizer. I saw this on Pinterest and liked it because it was compact and there was a reason for it. I had a big medal file folder holder that just caught junk. I hope this will eliminate that. (And those are old lesson plans on the front. I'm good, but I am not that good!)


Straw dispenser turned pencil dispenser. Excited about this and hoping it will eliminate fighting over pencils!

Book covers for chair pockets. Amazing. I got these from the Dollar Tree. They are different as one has a deep pocket and the other has a strap, but I just wanted them to hold dry erase boards so no big deal. Love these!

I also did a meeting binder that I will share when I am finished with it and I am also going to share my lesson plan book.

New adventures in domestication!

I spent all day Wednesday doing  freezer meals. Here is my post about that with an update. I also ran to the store and got two bag of peas and a big bag of peanuts to freeze. Klint came home Wednesday and said that he was going to get some corn from a manager at his office. I told him that was great because we love corn and we new it would be good to have some in the freezer! He called me Thursday and said he had the corn and it was a lot. Well, in my mind I pictured 40 to 50 ears of corn. What greeted me when I got home was a bag with almost 90 ears of corn. Here is a picture of about half of it!


So for the rest of Thursday I dedicated my time to research on corn and freezing it...fun day! So I knew Friday that not only was I putting up corn, but I also putting up peas I had bought the day before. When Klint came home that night, he had another surprise...Tomatoes! It was way more than what we could eat so we looked up how to can our own food which turned into another all night research project and after three calls to my grandma we decided we could do it....maybe!

Klint decided to take off Friday morning and help me with the corn and the whole canning process. We shucked corn and blanched our peas (which I had done before). Klint also froze some green peanuts that I bought when I got the peas.  Here is a picture of our clean corn and our peas!


Now, I do my peas a little different from some people. My grandma showed me how to do my peas and she said to keep the juice you cooked them in and put them back in. She said some people just put water and that is fine, but I like it with the juice from the peas. (I guess that is different. Let me know if it isn't.) We got eight bags of corn on the cob and two quart size bags of cream corn.

That night we made our first batch of jarred food...Salsa! I found a fairly easy recipe online and it made six jars. The salsa is really mild and taste so fresh. We had extra and I just put it in the fridge. We were a little worried because they didn't seal like I thought they would. I went to the freshpreserving.com website and reread again about making sure the jars seal. Once I pulled them, they sealed almost instantly! So happy!

Saturday we got up and went to the farmer's market and got more tomatoes, some banana peppers, and okra. We cut the okra and froze it. We used the banana peppers and made pepper relish. We used part of the tomatoes to make tomato relish and the rest will be used to make stewed tomatoes! I have called my grandma a few times just to verify certain things about canning and she has answered so patiently and everytime she says "It is so good you are putting up food for your family." and I can hear the pride in her voice! It is a good feeling!

My point in writing this is to say, don't be scared! Try new things. We are amateurs at this and have had some pretty good luck! Just follow the instructions and go with it!

Freezer Meals, Part 3: Put it in the Ziploc and You Shake it All Around.....

On Tuesday I got all my ingredients I was going to need for my meals. I also went ahead and made my bags for each meal with the instructions. I also went through and collected all of my recipes and put them in once document. You can get them here. Here is a picture of my bags.



I also used some Glad FreezerWare for my shredded chicken and my taco meat.  Here is a picture of them.


The first thing I did Wednesday was go through the freezer and organize and throw away! I hate to throw away food, but we had stuff from 2009!!! I was shocked! I also found a couple of bags of frozen chicken that I didn't know we had so I pulled it to do my shredded chicken. There is enough of it that I will have enough for at least 3 containers of shredded chicken for soup or rice. If I have any extra raw chicken I will just freeze it to grill or whatever we decide.

Jaima from Ring around the Rosies has 10 steps that she follows to do her meals. They are below.

"1) I made a list of my recipes. I used crock pot recipes I already had, plus some of Stephanie’s!
2) Then, I made an ingredient list and went shopping (don’t forget your freezer bags).

3)To start, I gathered all of the ingredients I needed. 
4) Then, I chopped all of the veges first. Dice all of your onions, carrots, peppers, and mince your garlic. 
5) Label your bags with the directions and 
6) THEN add your meats (I trimmed my chicken breasts and cut in half to have a total of 4 pieces of chicken strips per bag).
7) Add your veges. 

8)Add your other ingredients. 
9) Let out air, seal bag, and lay flat!
10) Freeze & Rejoice!"

The more I read them the more I was not sure they would work for me. I thought I would lose track of what I was doing. Here is what I did.

1) Looked up my recipes, made my grocery list, and went shopping.
2) Printed out my recipes and cut them apart. I wrote my instructions on my bags.
3) Separate all my meat into each bag.
4) Chop my veggies and add to bags. I kind of just went by the recipes at this point and added until the bag was done sealed it and put it up. I did not add my spices because I read in another blog that sometimes the taste can be distorted through freezing. I saved the recipes and will add when I make them.
5) Freeze and Rejoice!

Here is what I ended up with:
  • 5 packs of shredded chicken
  • 2 meals of hamburger patties (5 each)
  • 1 meatloaf
  • 2 gallons of spaghetti sauce
  • 1 pork loin marinated
  • 16 Crockpot meals
  • 2 packs of taco meat
  • 2 Chicken meals for stove top
That is 31 meals!!! Whoop whoop!  Plus I had a lasagna that I froze last week so I have 32 meals in the freezer ready to go! I am so excited and feel a little weight being lifted for this upcoming school year.

A few tips:
1. Pace yourself. Jaima said she got hers done in a two hour nap time and I can imagine once you are well practiced you could probably do that. It took me starting at 9:00 to 4:00 to get it done. (I did run to the grocery store in the middle of the day to get something for Klint).

2. Clean has you go. I did have to take the garbage out twice while doing this, but I would finish one stage and empty and do another stage and empty. I would also spray my counters and clean after each thing I did. It makes it easier!

3. Be careful while chopping and don't slice your finger...like I did! Eeek!

I am still in shock about having that many meals in my freezers, but it is a great feeling!

Update: A few things I learned after the freezing happened!

1. Use the ziploc bags with the zip. They are way easier and they don't leak like a couple of the bags did all over my freezer!

2. Try to be careful how you put the bags in the freezer. Our chest freezer had a really hard time keeping up, but it finally did after a day and a half!  We learned that putting the food on the bottom instead of at the top helps.

Freezer Meals, Part 2: Let's Do This!

With school getting closer I am feeling the pressure that comes with getting my classroom stuff done, the idea of keeping the house going, and wanting to make healthy meals for my family. So I decided while I am at the grocery store tomorrow I am going to get a few meals ready for the freezer to help out with back to school and maybe have a few left for when the baby gets here. Closer to when the baby is born I am going to do some more, but the ones I am doing tomorrow are for the crock pot and you just can't beat having dinner ready when you get home after work.

The website I am getting the recipes from is from Ring Around the Rosies. She has three parts to her freezer meal cooking. These recipes come from all three parts. She has lots of great recipes and they are all pretty simple. She does it ten steps which I think I can manage. Below is a list of the ones I will be freezing.

Teriyaki Chicken
Savory Chicken
Lazy Day Stew
Newlywed Beeftips
Slow Cooked Beef Fajitas
Summertime Beef Tips
Cilantro Lime Chicken with corn and black beans
Chicken Divine

I am also going to go ahead and brown a couple of pounds of beef, make taco meat, and make some shredded chicken to have on hand.

My main concern is the cost, but I figured once I get these done, they will be on my menu so it may cut down on some food costs....that is just a theory. I'll let you know how the grocery bill looks tomorrow.

Let me know if you have tried these and how they turned out.

Update: I got all my food today. We have a busy day planned so tomorrow will be my putting up day. In addition to the meals above, I am also going to do two things of spaghetti sauce, a meatloaf, and scattered chicken. I also bought rice and noodles and other things to go along with what I cook. I am excited and will post pictures of what all I come up with!

Baby Kelly update!

I went to the doctor today for an "exam" and just a general visit. I talked to her about having terrible headaches. Since I am pregnant all I can take is Tylenol which does nothing. I went to McDonald's before my appointment and got Sophie and me a Happy Meal and got a kiddie sized sweet tea and it did take the edge off of my headache. I told the doctor and she asked me if I had quit caffeine completely and I told her yes. She said "You don't have to do that!" I felt a rush of relief. She said I could have a cup of coffee or some sweet tea everyday if I wanted. She said two caffeine drinks a day. I am not a caffeineaholic by any means, but when school starts I do like my coffee so it was nice to know I am not completely cut off. Maybe it will ease my headaches up a little too. We also listened to the hear beat and it was 140 bpm which is good and I could hear it kick or move. Love that sound!

She told me she would see me back in 4 weeks which actually got changed to three weeks because of a scheduling conflict and she said that if I wanted we could take a peak to see what we are having! I am so excited!!! So August 1, 2012, if the little booger cooperates and it isn't too early, we will see what we are having. I posted a poll on my blog for everyone to guess what they think I am having. I have looked at the Chinese Gender Prediction Calendar and it was right with Sophie and this time it says we are having a boy. Below are two pictures, one with Sophie and one with this baby. Busch Gardens Tips

My step-mom has wanted to take the girls to Disney World for a little over  year now and we have wanted to take Sophie, but just trying to find the time and no having a baby, it hasn't worked out. So we decided we would do Busch Gardens while we were down in the area to see how the girls did and to just try something different. Here are a few things we learned from our trip.

1. Buy your tickets online. You have about $10 per ticket doing it that way and you don't have to wait in long lines when you get to the park trying to buy your ticket.

2. Take the 2nd free day! We got the 2nd day on all of our tickets even though we knew we may not use them. Sophie and I did when we went that Saturday with my friend. With all the money you spend on tickets you want to get your money's worth.

3. Take in water bottles. Busch Gardens allows you to bring in your own water bottles. We just froze some and then packed them in a tube cooler we had. There are water fountains in the park and we just refilled them. We also snuck in some snacks for the girls. They also sold cups that you could refill for $1, but it was only with Coke products. My friend has a little cooler that they take in and have a picnic at the park.You aren't supposed to bring in coolers, but they don't check strollers so if you can do it...DO IT! We bought our lunch while we were there and it was outrageous how much we paid!

4. Don't ride the train! The train was neat, because you got to see some animals up close. The bad part about it was it was slow and it was HOT!!!

5. Do ride the Sky Ride! You can still see a lot of the park and it is a lot cooler.

6. Bring a swimsuit for the little ones. They have a Sesame Street section with lots of kiddie rides and they have a few water activities for them too.  We didn't bring one the first day and Sophie just wore an extra pair of shorts I happened to bring just in case and I bought her a shirt on the way. The water bleached spots in her shorts so just beware that you don't put them in something you really like. We used a swimsuit the next time and it didn't bleach out at all.

7. Pace yourself! If you plan to go back a second day, don't stay all day the first! We were miserable and the girls were so sleepy. Just don't overdo it!

St. Petersburg, Florida

We got back from a trip to St. Petersburg, FL yesterday. Sophie is truly a beach bum and I am really glad we got to take this trip. My step-mom and daddy rented the condo and we feel so lucky they let us use it with them. If you have never visited St. Pete, it is a definite beach town. It has a very laid back vibe. There are lots of little diners, tiki bars, and other fun little places to visit and it isn't too far from Tampa which we took advantage of and visited Busch Gardens (post to follow about that). The beaches are really pretty in St. Pete as well. The water is clear and the waves are really small which is great for Sophie and other little kids. Another great thing about St. Pete are the seashells! Sophie love "sheshells" as she calls them and was a definite seashell hunter. We found a lot! Here are a few pics from the trip!

We visited my best friend, of over 10 years, Jaime and her family a few days and they live further down the coast in Sarasota. We had a picnic at the beach and then the kids got to play. They had so much fun. The beaches in Sarasota are gorgeous. The sand is WHITE!!! I can't stress how white it is and the water is super clear. The waves were small too and Sophie like it because she could go way out in the water and stand because of sandbars. Here are few pictures from our visit with Jaime!

I would highly recommend taking little ones to the gulf because the water is calmer and warmer and it is easy for them to hunt seashells! There are lots of great places to stay on the gulf too!
